Prosciutto and Goat Quiche Recipe

This cheesy Prosciutto goat quiche is fully loaded with lots of fresh herbs, prosciutto, tomatoes, and goat meat to bring the taste to another level. Here is the recipe.

INGREDIENTS

Quiche Pastry
  • 2 cup all-purpose flour, sifted
  • salt
  • ½ lb(s) cold butter, cubed
  • 1/4-1/2 cup of ice water

Quiche Filling
  • 3 large shallots with skin cut in half
  • 1 Tbsp olive oil
  • 2 cups of 2% milk
  • 3 eggs 
  • 4 sprig thyme with leaves picked
  • ½ cup of goat cheese, crumbled (4 oz)
  • 2 cups of baby arugula
  • 6 pieces of thinly sliced prosciutto
  • salt and pepper

Quiche Pastry
  • Combine flour, salt, and butter in a large bowl and mix using the tips of fingers until ingredients resemble coarse cornmeal.
  • Add ice water a little at a time until the dough just comes together.
  • Remove the dough from the bowl, form into a disc, cover with plastic wrap and place in the fridge for 1 hour.
  • Preheat oven to 375F.
  • Lightly flour work surface, roll out dough and place in a pan with a removable bottom. Allow dough to hang over edges.
  • Trim edges slightly, still leaving an overhang of dough and poke the bottom of the pastry with a fork.
  • Place crust on the baking tray and cover the bottom of the pastry with tin foil. Fill with dried beans or pastry weights and bake for approximately 15 minutes.
  • Remove tin foil and beans, place pastry back in the oven until bottom is golden brown, approximately 10 minutes.
  • Remove from oven, while the pastry is still hot brush a thin layer of quiche egg mixture over the bottom to seal.

Directions:
  • Preheat oven to 375F.
  • Place shallots in a small sauté pan skin side up, coat with olive oil, season with salt, and roast for 30 minutes until tender.
  • Reduce oven temperature to 325F.
  • Peel skins from shallots and set aside.
  • Place milk in a pot over low heat until scalded, set aside.
  • In a bowl, whisk eggs, thyme, salt, and pepper until incorporated. Slowly pour the warm milk into the egg mixture, continue whisking.
  • Scatter roasted shallots and goat cheese into the base of the pastry crust.
  • Pour egg mixture into Quiche Pastry. Bake in the oven for approximately 20-30 minutes, until the custard has set.
  • Remove Quiche from oven and allow to cool. Slice into portions and place arugula and prosciutto over Quiche.
