Ingredients [6 persons]
- 1 shortcrust pastry
- 400g spinach
- 10 cl heavy cream
- 1 pinch of Nutmeg
- 250g ricotta
- 3 eggs
- 20g butter
- 1 pinch of salt or fine salt
- 1 pinch of pepper
Equipment

- Pie pan
- Bowl
- Frying pan
Directions:
- Wash the spinach, remove the ribs and wring them out.
- Melt the butter in a frying pan.
- Add the spinach and sauté for around 8 minutes. Then let them cool in a colander to remove the rest of the water, then chop them coarsely.
- Beat the eggs and the cream in a bowl.
- Add the spinach, the ricotta, salt, pepper, and then add the Nutmeg.
- Pour the filling over the dough and cook for about 30 minutes at 175C/345F.
- Let cool a little before serving.
